Pas Dosè Classic Method Sparkling Wine
The wine
1972 is the year the Ciufoli Family, coming from the
Castelli Romani, bought the company (which in 1998 became Poggio Bertaio) and moved
permanently to Castiglione del Lago. This sparkling wine was created to celebrate 50 years of activity.

Pas Dosè (less than 3 g/l of residual sugar)
Vinification
Soft pressing to separate the juice from the skins. The must ferments in steel
tanks at a controlled temperature of 16°C for 25 days. After 3 months of aging in steel, the
base sparkling wine is prepared. At this point, the base wine, added with the liqueur de
tirage, is bottled, and the bottles, sealed with bidoule and crown cap, are laid down and
stacked in the underground part of our cellar at a constant temperature of 14/15°C, where it
rests for 36 months. This is followed by disgorging.
Organoleptic Characteristics
Bright straw yellow color with golden reflections, fine and persistent
perlage, aromas of bread and yeast mix with hints of citrus and dried fruit. The taste is savory, fresh, fine, and well-balanced.
