The Wine
Apo was created to celebrate the 80th birthday of Fabio Ciufoli, the founder of the winery; the 50th birthday of his son Fabrizio and the 20th birthday of his grandson Fabio. These are the dates written on the label. The name Apo come from the fact that when Fabio, the son of Fabrizio, was little he couldn't pronounce his name, so he called himself Apo. Moreover, the title Apo serves to distinguish it from the others.
The label reproduces the face of Pateck Philippe watch, given to Fabrizio by a very dear friend, the owner of a nearby vinery where he took his first steps as a consultant. The choice of a watch, in addition to remembering this dear person, serves to show time an precision, factors indispensable to achieve the perfect wine.
Appellation
I.G.P. UMBRIA.
The grape variety
60% Sangiovese; 30% Merlot; 10% Cabernet. They are produced separately, worked 3 times a day by hand and left to ferment for 22 days at a controlled temperature, after which they are drawn off put directly into barrels.
Ageing
The wine continues to mature in the bottle for at least 15 years.
Sensory characteristics
To the eye: The colour is ruby red, dense and impenestrable.
In the nose: A broad spread of aromas, intense with dark fruit and spices.
In the mouth: Solid and profound, well balanced, with a pleasantly flavourful finish.
